Recipe: Healthy Turkey Meatloaf

Happy Tuesday!

Hope everyone had a great Labor Day Weekend! It was pretty quiet around here — did some chores, did some work and got some sleep, which was great.

I went to Body Pump this morning and it was so tough! I haven’t been in forever, but I’m excited to start working out again. I’m also trying to stay around 1,200 calories a day which is always a bit of a struggle. I will go over some days, as long as I get a good workout in — not over 1,500 though! Going to need positive vibes on this one — this is a busy time of year, but I NEED to be more healthy. Like so many others, I don’t always make it a priority, but I’m hoping to change that with a little planning.

With that said, today’s post is one of my favorite recipes: healthy turkey meatloaf.

I originally found it on Men’s Fitness’ site here. I like to add some peppers– I love veggies and the Italian Parsley gives it an extra freshness kick, too.


Healthy Turkey Meatloaf


1 tbsp. olive oil

1 egg

1/2 sweet onion, chopped

2 garlic cloves, minced

1 lb. lean ground turkey (93% lean)

1/2 cup plain bread crumbs

1/2 red bell pepper, chopped

1/2 green bell pepper, chopped

2 tbsp. grated Parmigiano-Reggiano

1/2 cup chopped Italian parsley

1 tsp. dried basil




  1. Preheat oven to 350˚F.
  2. Heat the olive oil in a skillet. Add the onion and garlic, and sauté until lightly browned.
  3. Using your hands, mix together ground meat, bread crumbs, peppers, Parmesan, egg, parsley, basil and cooked onion and garlic. Shape mixture in a loaf and place in shallow pan.
  4. Drizzle ketchup on top. Bake 45 minutes to 1 hour.
  5. Let sit for ten minutes before slicing.

 Serves: 4

According to MyFitnessPal, it has 339 calories per serving (31.7 grams of protein)





It was delicious! I made some oven-roasted asparagus and sweet potatoes (not pictured) for dinners for the next two days, as well. I always admire those who meal prep for the week, so this is my first kind-of attempt at that!
