Hope everyone had a great Labor Day Weekend! It was pretty quiet around here — did some chores, did some work and got some sleep, which was great.
I went to Body Pump this morning and it was so tough! I haven’t been in forever, but I’m excited to start working out again. I’m also trying to stay around 1,200 calories a day which is always a bit of a struggle. I will go over some days, as long as I get a good workout in — not over 1,500 though! Going to need positive vibes on this one — this is a busy time of year, but I NEED to be more healthy. Like so many others, I don’t always make it a priority, but I’m hoping to change that with a little planning.
With that said, today’s post is one of my favorite recipes: healthy turkey meatloaf.
I originally found it on Men’s Fitness’ site here. I like to add some peppers– I love veggies and the Italian Parsley gives it an extra freshness kick, too.
Healthy Turkey Meatloaf
1 tbsp. olive oil
1/2 sweet onion, chopped
2 garlic cloves, minced
1 lb. lean ground turkey (93% lean)
1/2 cup plain bread crumbs
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 tbsp. grated Parmigiano-Reggiano
1/2 cup chopped Italian parsley
1 tsp. dried basil
- Preheat oven to 350˚F.
- Heat the olive oil in a skillet. Add the onion and garlic, and sauté until lightly browned.
- Using your hands, mix together ground meat, bread crumbs, peppers, Parmesan, egg, parsley, basil and cooked onion and garlic. Shape mixture in a loaf and place in shallow pan.
- Drizzle ketchup on top. Bake 45 minutes to 1 hour.
- Let sit for ten minutes before slicing.

It was delicious! I made some oven-roasted asparagus and sweet potatoes (not pictured) for dinners for the next two days, as well. I always admire those who meal prep for the week, so this is my first kind-of attempt at that!
Anyone have any go-to recipes that keep well as leftovers? How do you meal plan for the week?
Have a great day — good news, it’s already a four-day work week!
